Ingredients

  • 3–4 lbs shrimp (shell-on, deveined)
  • 2 lbs smoked sausage, sliced into chunks
  • 2–3 lbs small red potatoes
  • 6–8 ears corn, halved
  • 1 large onion, quartered
  • 1–2 lemons, halved
  • 3–4 tbsp Old Bay (or preferred seafood boil seasoning)
  • 2 tbsp kosher salt
  • 3–4 cloves garlic, smashed
  • Water (enough to fill the basin halfway)

Optional: crab legs, clams, bay leaves, hot sauce


Steps

  1. Build the Fire
    Build the fire under the basin. The heat needs to be pretty intense, so this will take some trial. We recommend either the "log cabin" method or building the fire within a ring of stone. Bonus if you have a Fire Ring! (Note: Please do this safely as it requires unbroken attention and tending.)
  2. Season the Water
    Fill the basin with water and add salt, Old Bay, onion, lemon, and garlic. Bring to a rolling boil, adjusting the chain height as needed.
  3. Cook the Potatoes
    Add potatoes first and cook for 10–15 minutes until just tender.
  4. Add Sausage & Corn
    Add sausage and corn, cooking another 5–7 minutes.
  5. Finish with Shrimp
    Add shrimp last and cook for 2–3 minutes, just until pink and cooked through.
  6. Drain & Serve
    Carefully remove or drain the contents and pour onto a large tray or directly onto butcher paper for serving.

Pro Tips

  • Season the water aggressively; that’s where the flavor comes from.
  • Don’t overcook the shrimp—they only need a few minutes.
  • Add a splash of hot sauce or extra lemon at the end for brightness.
  • Serve straight from the Cauldron and let everyone gather around.
